Stufato di Tutto nel Frigorifero di Robertino, con parmigiano vegano fatto in casa e crema di avocado

(Rob’s stew of everything in the fridge, with home-made vegetarian Parmesan and avocado cream)

Ingredients and instructions

Stufato di Tutto nel Frigorifero

400 g can of Italian peeled tomatoes
A small handful of Thai basil leaves
Add the secret ingredient- anything left over in the fridge. In this case, capsicum, onion, carrot, potato, dried black mushrooms, some old cauliflower soup, some old broccoli soup.
A squirt of Siracha Chilli Sauce
Blend these with about 250 ml of water to make a “soup” and place in a cooking pot.
Add:
125 g Quinoa
400 g brown lentils
50g Macro Vegetable Protein

Cook until the Quinoa has become soft, adding water if necessary.

Serve with:
Parmigiano vegano fatto in casa (homemade vegan Parmesan)
¾ cup cashews
3 tablespoons of yeast
¼ tablespoon of garlic powder
½ tablespoon of salt

Blend into a powder and sprinkle over the Stufato
Crema di avocado
½ a peeled ripe avocado
Sour cream

Blend to a cream and put a dollop on the Stufato

A big splash of gutsy olive oil(the robust one, not that whimpy “Classic” stuff)

I know that you will all want to rush off and try this. It comes with a warning, though. It can have, how shall I say this, interesting consequences later in the day and I suggest that you don’t make it for your first date with anybody.
